Butternut Squash Casserole

Butternut Squash casserole
3 Cups Butternut squash, mashed
1/2 Cup Butter
2 Eggs
1 Cup Sugar
1 Tablespoon Vanilla
1/2 Cup Raisins, optional (I don't use)
1 Cup Brown Sugar
1 Cup Nuts, chopped (I use pecans)
1/2 Cup Butter
1/3 Cup Flour
Directions:
Mix together the butternut squash, 1/2 cup butter, eggs, sugar, vanilla, and raisins and pour into a buttered casserole dish. Mix the brown sugar, nuts, butter, and flour in a seperate bowwl with a fork. Sprinkle this mixture over the top of the squash and bake at 350* for 30 minutes. Or untill nice and golden brown on top

Okay just in case you've never baked a butternut squash here's how;
Peel the skin off the with a peeler. This takes a little time. Slice off each end. Cut in half. Scoop out pulp and seeds, this is similar to a pumpkin. Then chop ino cubes. Place in a pan and drizzle with olive oil. Bake at 350* until tender about 30-45 mins.This is my way of baking sqash, and the butternut squash is great just like that as well with a little pepper.
